However, shortly into the video they select the pen tool, and then a little to the right in the toolbar, you can clearly see options for what I believe are "fill" (or color) and "stroke" before the rotobezier checkbox. If you click over the word "Fill", AE will show you the options for selecting the type of fill of your shape layers. But if you click over the color, AE gives you the options for the fill color.
